Anyway, my weirdness about eating formerly alive creatures aside, this salmon is good. So very good. I have wrestled with giving out the recipe for a while now. I am reluctant to do it, but I want other people to enjoy the goodness, too. So, before I change my mind and talk myself out of it again, here it is.
Salmon
What you need:
Salmon fillets, or an entire side of salmon, fresh if possible, or if using frozen, make sure it is thawed
Mayonnaise
Brown sugar
salt
What you do:
Preheat your oven to 400 degrees. Take a baking sheet and cover it with aluminum foil (this helps with clean up later, and will protect any Teflon coated baking sheets from the salmon scales), even up and over the edges, then spritz it with nonstick spray.
Plop your salmon onto the foil and sprinkle lightly with salt. You can pepper it if you like, but I never do.

Now, take your mayonnaise and coat your salmon with it. You don't want a thick coat of mayo, but enough to completely cover the fish with a thin layer.

Then you take your brown sugar and press it into the mayo until you have a crust of brown sugar that covers the mayo.

Pop your salmon into the oven and let it bake about 10 minutes per inch of thickness, basically until it is firm and flaky. remove from the oven and let it sit for about 5 minutes, then serve and enjoy. I normally serve this with cheddar twice baked potatoes and a vegetable of some kind, but it's also good with rice or pretty much anything else.
Done! It tastes better than it looks. Really.
